Centralized vs decentralized fulfillment centers/kitchens for custom food startup

It seems like fulfillment centers for all kinds of ecommerce and dnvd/d2c brands are centralized. What is the benefit of this model compared to having decentralized fulfillment centers spread across different cities/states?

I'm not sure how much details I'm allowed to get into without it being considered promotion. But the specific business is for d2c fresh, premium, customized pet food. Would there be a benefit to having one centralized kitchen/fulfillment center and then ship out from there? Or would it be better to have individual kitchens in key markets/cities and fulfill local orders?
